Today I will share a favorite of my vegetarian/Mediterranean recipes that I enjoy regularly, especially when I can get the shrimp on sale. Over the past year, while most people were gaining weight, I have dropped 30+ lbs with not much effort at all. With so few distractions, I cooked and prepared new recipes, and found that to be my “peace” during the down time we all went through. Below are the main topics to my plan. I basically eat…..
Greetings Fellow Foodies! The world has been tested this year, many have suffered, but hopefully you are well and looking ahead to a new normalcy. I believe that good nutrition should always be our goal so our bodies are able to fight illness, and carry us through our lives to live long and well. Summer is here, and a lighter fare for these hotter days might be a welcomed main dish. One of my special salads with a variety of…..
Inflammation in the body is the cause of many dis-eases and ill health. Unfortunately, many do not recognize a chronic illness and temporarily treat it with medication, such as heartburn, indigestion, decreased energy, and pain. The worst is chronic pain. Chronic pain is one of the biggest problems in our society, unfortunately leading to overuse of anti-inflammatory medications, and extreme use of narcotics. Arthritis is one of the worst forms of inflammation/degeneration in the body. The joints lose their lubrication,…..
Take a look at the introductory article published on 2/21/18, in the Aiken Standard newspaper about me and my book. What a nice story of my journey to becoming an author and nutritionist.
HAPPY SPRING!!! I am adjusting to a new climate and looking forward to the warm sunny days, colorful blooming azaleas and daffodils, and a break from my delicious hot chicken soup that has sustained me over the past few months. The change of seasons affect our body more than we realize. Our skin, digestion, and sleep patterns all adjust, similarly to changes in Nature all around us. In Ayurvedic medicine, each body type, or dosha, has its own response to surroundings,…..
Hello Food Lovers where ever you may be. Happy 2018, wishing you all a healthy and prosperous new year! I am back and ready to go with new recipes, and photos of some great old ones too. I took a little time off for a change of pace and scenery, but am getting back in the groove hoping all your resolutions are a success, OR NOT. I don’t believe in making resolutions. Who needs another plan, deadline, or mandatory activity…..
Greetings! Hopefully where you are, there is a change of season, and a feeling of anticipation for the coming holidays and new year. Sometimes, we look forward to the end of the year in hope of a new beginning or a change in our path, and as they say, change is always a good thing. Even though I usually cook for one, when I decide it is time for a Sunday pasta day, there are always leftovers. I made my mother…..
I wanted to share with you one of my favorite dishes, kale salad and citrus seafood stir-fry. This meal is light and full of so many nutrients, you can, and should eat as much as you want. I love kale and all greens, and try various ways to cook them, as well as eating them raw. This kale salad is fun to make, lasts at least a couple of days in the refrigerator which allows all flavors to melt together,…..

It is when we should focus on gratitude, and how we can cultivate…..
Hello Foodie Fans and Happy Autumn! If you live in a place where the change of seasons is obvious and rewarding, as autumn in New York State, you are fortunate. I have just returned from a very nostalgic visit to my home town in Columbia County, New York. When you read my book, you will see many photos, and experience my life growing up on our apple farms upstate. Visiting family and friends, and traveling to the homesteads, was…..
