Greetings Fellow Foodies! The world has been tested this year, many have suffered, but hopefully you are well and looking ahead to a new normalcy. I believe that good nutrition should always be our goal so our bodies are able to fight illness, and carry us through our lives to live long and well. Summer is here, and a lighter fare for these hotter days might be a welcomed main dish. One of my special salads with a variety of fresh “antioxidant” filled vegetables and fruit, as well as a seafood protein is just enough. Antioxidants are responsible for a healthy immune system and give us the power to fight sickness. I have also included a list of supplements that may be added to your daily regimen. Also, remember many spices are considered antioxidant additives, such as turmeric, garlic, and curry.
HEALTH INFUSED SALAD
Butter lettuce
Arugula or Watercress
Red onion
Carrot-shredded
Tomatoes-grape or cherry
Hearts of Palm
Avocado slices
Cranberries-dried, grapes, apple, or pomegranate seeds
Walnuts
Salmon fillet-skinless, baked
DRESSING
Olive oil-fruit infused if desired
Balsamic vinegar
Soy sauce-low sodium
Lime or lemon juice
Garlic powder, turmeric, black pepper, fresh basil
List of supplements: Vitamin E, C, B6, CoQ10, Lipoic Acid, Ginkgo Biloba, and Selenium. These maintain youthful cells, a strong heart, and a high functioning brain.
